White Wines
2007 Mount Burrumboot Estate Viognier
Last year, we made this wine as a single varietal on it’s own, so that we could see exactly how the vineyard expressed itself in Viognier. It has produced a highly fragrant wine, with dried apricot, ripe pear and tropical fruit, a rich palate, and clear varietal character. The acid balance is good, with a viscosity typical of the variety at optimum ripeness.
2006 Mount Burrumboot Estate Heathcote Marsanne/Viognier
Marsanne and Viognier are definitely the most glamourous whites around at the moment, and when you blend them, wow! This blend has initially a striking bouquet of limes, followed by the ripe stone fruit character redolent of Viognier. The palate is well structured, crisp and fruity, with excellent mouthfeel and finish. Who says Heathcote can't make white wines?
Red Wines - lighter style
2006 Mount Burrumboot Estate Gamay
Intriguing and complex, Gamay is a rarely found in Australian vineyards. The only Gamay grown in Heathcote, only a small amount was made from these difficult vines. Gamay originates in the Beaujolais region of France. This is a lighter style of red wine, ruby red, and redolent of violets and roses, with a fascinating earthiness, offset by hints of wild strawberry, crushed raspberry leaf and a savoury finish.

2005 Mount Burrumboot Estate "Elle Rougit" Rose
Nothing serious about this wine. A blend of Tempranillo, Sangiovese and Merlot, this is a wine for alfresco dining at its best. Exhibiiting a fresh nose, with a savoury palate and long finish, it is ideal for lazy outdoor lunches, or balmy summer evenings with a ripe goat's cheese. A wine for good friends, good food, good times.

Winemaker's notes: Inspired by a trip to Spain, I decided to use Tempranillo, as well as its Italian cousin, Sangiovese, in this rose blend, to give a savoury character to the rose. The Merlot gives fruit weight, and fills the mouth, whilst remaining a dry wine. Ideal al fresco dining, barbeque wine.

Red Wines - noble varieties
2005 Mount Burrumboot Estate Sangiovese
Robust and flavoursome, Sangiovese craves the company of crusty breads, antipasto, garlicky, chunky meat. Intense blood plum colour typical of Heathcote wines, with hints of cinnamon, and generous, sweet bramble fruits, sour cherry and blackberry toward the back of the palate. Rustic tannins with a long finish. Great varietal character.
2006 Mount Burrumboot Estate Tempranillo
A spicy, mysterious Spaniard, with layers of complexity behind a smoky veil. A sexy, inky wine, intense maroon in colour, and with a complex nose showing black cherries, some mint characters, chocolate and fruitcake spice. Well balanced and elegant wine, with black fruits, plum, coconut and cloves, and firm, yet silky tannins and good persistence. Rated as one of the top Tempranillos in the country, and one of the top six wines in Heathcote by AGT Wine Magazine.
2005 Mount Burrumboot Estate Merlot
The maturing vineyard is starting to show in the 2005 Merlot. Grippy tannins and big, supple fruit characters, that have been a bit uneven in previous vintages, show true integration in this wine. Deep maroon with an earth tinge, this wine exhibits a magnificent bramble fruit on the nose, bursting with a rich, black currant pastille, and hints of cassis and blackberry leaf. The palate is well structured, big fruit, with chewy but supple tannins and fine acid to balance them. A broad shouldered Merlot, savoury and foresty, with a long finish.
2005 Mount Burrumboot Estate Shiraz
A more elegant Shiraz than the previous vintages, where our winemaking attempts to produce a more stylish and refined wine have borne fruit. A muted smokiness on the nose is accompanied by some floral notes; the palate shows mulberry and plum, stewed dark fruits, savoury, with some spice; black pepper. Long finish, with good acid/tannin balance and excellent mouthfeel.
2005 “Mad Uncle Jack’s” Petit Verdot
As usual, Petit Verdot excels in our vineyard, producing brooding, intense wines, with the inky, deep purple it is reknown for. The nose is typical Mad Uncle Jack’s – blackcurrant and cloves, fine chewy tannins and black fruits with a long, spicy finish. It is the vines of the Post Office block that make “Mad Uncle Jack’s” our most organic block, with heavy straw mulch and minimal irrigation. They produce our most consistent wines, with typical big colour and flavour; however, the 2005 seems, at this stage, to be showing greater refiinement than the blockbuster 2004.
2004 Mount Burrumboot Estate Heathcote Shiraz
An awesome example of Heathcote Shiraz, with fantastic, intense fruit, but with extreme elegance and finesse. The best Shiraz we have made to date, a complex, robust wine with mulberry and blackberry fighting on the palate and nose, leather and spice, and fine, elegant tannins. Excellent mouthfeel and length, with great cellaring potential.

Ageing: 11 months in French oak barriques.
Bottled: February 2005
Alcohol: 14%
pH: 3.62 at picking
Case size: 750ml x 12
Case weight: 17kg
Closure: Top quality cork
Winemaker's comments: This wine was going to be a legend from the first. The 2004s all show fantastic aroma, and the cool ferments ensured this. The colour is intense Heathcote black. This wine was matured solely in French oak, using Sirugue for the fineness of tannins. Enormous cellaring ability, but drinking well now with breathing or decanting.

2004 Mount Burrumboot Estate Heathcote Merlot
Inky, dark, voluptuous and velvety are the words that spring to mind here. If you thought Merlot was a lightweight, think again. There is a reason why the great wines of St Emilion and Bordeaux - the Petrus and Cheval Blancs - are mainly based on this variety. And as with all great Merlots, this wine will age and age - lucky collectors will see the results of cellaring this beauty. Even jaded wine writers love this one.

**** Winestate Magazine Merlot Review. 2006
"The Merlots are better than most; the newly released '04 ($30) has nicely balanced ginger, spice, mint and raspberry flavours." Huon Hooke, Good Weekend Nov 2005
Region: 100% Heathcote
Harvested: February to March 2003
Ageing: 18 months in predominantly French oak barriques.
Bottled: August 2004
Alcohol: 14%
pH: 3.65 at picking
Case size: 750ml x 12
Case weight: 17kg
Closure: Top quality cork
Winemaker's comments: This Merlot is an outstanding example of Heathcote merlot - all inky fruit and voluptuous, velvety tannins. Picked quite late, as flavours were late to evolve in the vineyard. Again, cool ferments and solely French oak make this a superb example of the variety.
2004 Uncle Jack's Petit Verdot
Brilliant. If you haven't tried this variety, spoil yourself. Fantastic blackcurrent flavours and aromas, and long, persistent finish make this a giant of a wine. Heathcote Shiraz may be outstanding, but this variety will outstand them all. As with most Heathcote wines, the fine tannins allow it to drink well now, but it will absolutely blossom with cellaring.

Case weight: 17kg

Winemaker's comments: The latest ripening variety we have. Petit Verdot is slow to ripen, and in most areas cannot ripen sufficiently to develop the fruit characters and softer tannins. However, the terroir in the northern Heathcote region is ideal - perfect pre Cambrian soils, warm days and cool nights for weeks and weeks in early autumn - Petit Verdot loves it. No need to use this as a blender! Smelt magic, like a bottle of Ribena, as soon as it came into the winery from the crusher. The aroma made it a real pleasure to plunge in the middle of the night! I consider this to be our best wine. Shame there isn't more of it!
2005 Mount Burrumboot Estate Heathcote Tempranillo
A spicy, mysterious Spaniard, with layers of complexity behind a smoky veil. A sexy, inky wine, intense maroon in colour, and with a complex nose showing black cherries, some mint characters, chocolate and fruitcake spice. Well balanced with black fruits, plum, coconut and cloves, and firm, persistant tannins.
2003 Mount Burrumboot Estate Heathcote Shiraz
Following the success of the 2002 Shiraz, we went down the same track with our following vintage - longer oak maturation, in predominantly French barriques. Powerful fruit, huge black cherry and ripe sweet plum up front, followed by nutmeg and spices, with hints of licorice, leather and cassis. The tannins are fine and well structured, creating a surprisingly elegant, complex, yet full bodied wine, with a warm, persistant finish. A definite winter wine, ideal for partnering big osso buccos.

Winemaker's comments: A hot, dry, dusty and windy year. Fruit came in in good condition, and fermented for a week. We used wild yeasts for the first time with this batch. Temperatures were kept cool to maintain aroma and flavour. Wine was matured in mainly French barriques, and racked 4 times before bottling. This wine exhibits a spicy, leathery nose, with dusty tannins behind good, macerated black fruit characters.
2003 Mount Burrumboot Estate Heathcote Merlot "Old Soolum"
Named for our old sheepdog, Precious, a legend in her own lifetime and sadly missed. A "soolum" is a sheepdog, since you "sool" them onto sheep when you send them around a mob.
The 2003 Merlot shows the effects of the prolonged drought - these vines almost died from lack of water just after Christmas 2002. This "droughtiness" is reflected in the wine, producing a lighter style of merlot than the 2002. The colour has a more brickish hue, yet this wine delights the nose with aromas of rose garden and wild cherry. Surprisingly firm on the palate, with challenging, blocky tannins, this wine will reward patience, and improve with time.

Winemaker's comments: A viticultural disaster, these vines really struggled with the continuing 6 year drought. Made using wild ferments, the ferments never attained the typical "Heathcote" colour - however, following 18 months in French barriques, and a year of bottle age, this wine has some very attractive wild cherry and tobacco aromas, with grippy tannins and a persistent finish. It has emerged like a phoenix from the ashes, resembling the older merlots of St Emilion. Fantastic with roast lamb and pork! Goes to show, you never can tell.
